William Candelon took over this Gers institution, not far from Toulouse, a few years ago, retaining a classic, traditional spirit, both in the plates and in the atmosphere, with its old-fashioned tiled floor and white tablecloths. The top-of-the-range menus (€110 for the discovery menu, €140 for the tasting menu) feature the house classics, such as pig's trotter salad or snacked langoustines. This lunchtime, a menu featuring Fallot's mustard begins with beautifully textured, just-snacked scallops, served with a leek vichyssoise and a mustard gribiche sauce for a welcome liveliness. The Arctic char, steamed, is served with a fine tart of green cabbage; the whole, well executed but without surprises, finds its balance thanks to a fig butter and mustard sauce. The venison, cooked to perfection and accompanied by a fine, gourmet porcini ravioli, continues the clean, precise menu. The end of the meal, around a brioche with galanga and caramelized apple, brings sweetness and lightness. The wine list is well-stocked, and the staff, mostly young, are professional despite their lack of spontaneity.
