Gault&Millau's review 2025

In the heart of the Carmes district, this luxurious refuge is first and foremost a piece of history, as it nestles in one of the city's most beautiful 18th-century residences, crowned by a sublime pink brick facade enamelled with a coat of arms. Designed with spirit by interior designer Chantal Peyrat, the rooms retain their historic charm, with high ceilings and parquet flooring, while offering the very best in contemporary comfort. The 32 rooms and suites are decorated in shades of beige and gray, with sleek furnishings and open onto the two beautiful interior courtyards. A member of the MGallery group, the establishment also boasts a superb spa with fitness room, hammam, sauna and treatment rooms, and two restaurants, Le Cénacle and La Brasserie des Consuls, led by chef Maxime Canal.
