We had spoken very highly of Quentin Pellestor Veyrier, whom we had rewarded when he was with Gilles Goujon at Alter-Native in Béziers. His arrival in Toulouse is therefore a major event. At the beginning of the year, he took over Yannick Delpech's former fiefdom in Colomiers, which was once the Amphitryon à quatre toques, to turn it, with his partner Camille Hubert, into the city's new gastronomic destination. After several months of refurbishment, Camille redesigned the interior to create a superb result: bright, modern, warm, comfortable and refined. In the kitchen, the chef has recruited a team of young cadets, and created a menu glorifying the Occitan terroir, based around two hidden/imposed menus (of which we only know the towns that each represent a dish). On the plates, no fuss, no muss, just perfectly sourced local produce, and plenty of taste, thanks to brilliant ideas and flawless technique. In particular, we have fond memories of his "souvenir d'enfance de Puyvalador" (potatoes and bacon for a four-course meal!!!), this trout with Montpellier butter, and the apple dessert created by pastry chef Jean-Marc Joffraud (a former Grolet collaborator). The welcome and service are further assets: despite the youth of the entire team (including Camille, incredibly mature), everyone is ultra-pro, smiling, attentive, close to the customer and enthusiastic. The wine list is extensive and just right.
