Xavier Beaudiment is undeniably one of today's finest exponents of Auvergne cuisine, expressing a brutalist yet highly poetic idea of his country. Behind the almost austere façade lies a world of contrasting sophistication, perfectly illustrating the ambivalence of a land where volcanic rock and lush meadows rub shoulders. In these mountains, which seem to be made for walking, the chef has devised a hiking menu where plate after plate reveals all the variations of the region's terroir. It's an exercise in harvesting and breeding, unfolding in thirteen beautifully harmonious courses. Erudite cellar.
