Chef's Restaurant Located in the prestigious Hôtel Princesse Flore, La Flèche d'Argent is the perfect setting for talented chef Clément Lorente to express himself over the past five years. With his finger on the pulse, the chef manages the brigade while keeping an eye on service. In his five-course menu, the chef reveals part of his story with a crunchy carrot combined with sea urchin and caviar. A gourmet starter that could do with a little more iodine. This is followed by a red mullet in olive oil that demonstrates the chef's mastery of balancing flavors: the powerful rouille awakens the fish and gives it great length. Meat lovers will love the three-course veal cooked in a very gourmet way, before a far aux prunes flambéed with Auvergne marc, in which the chef brilliantly balances the sugar for a pleasantly regressive note. A fine wine cellar, with a wide selection of wines by the glass.
