Chef's Restaurant To visit Emmanuel Hébrard's restaurant is to experience the promise of absolutely Auvergne cuisine. The whole experience is rooted in the regional principle, an essence perfectly captured in the sober, elegant decor (volcanic stone and wood), as well as in the plates, the country-style presentation, the local produce and the memory of yesterday's recipes. The chef has brought it all together to create a new, personal cuisine, developed in a menu of just the right balance: a starter of quail, squash, autumn truffle, cep, white fig and vin de voile; trout, cauliflower and lemon balm; a farm pig, tuberous celery, Charroux mustard and truffade; a dessert of pear, woodruff, quince, saffron and rosewater. Good cellar selection, especially from Auvergne.
