A career change! This is what Flora Diallo, who has been passionate about cooking since she was a child, has done. Deciding to change her life completely, letting her love of good food take over, she took over Le Mandajors, the oldest restaurant in Alès still in business since 1929. A daily menu runs alongside a seasonal menu that changes every three months. Signature dishes prepared by chef Dimitri Gallego and Flora Diallo include boletus ravioli, boletus and chestnut oeufs cocottes, Cévenole fricassee and the famous chestnut cake. In this Cevennes-style "bouchon" with its white and olive-green walls, everything is homemade with the maximum amount of fresh, local produce. Dishes are accompanied mainly by local wines. And, as Flora Diallo has many strings to her bow, she also offers a catering service, Coup de Food, in her workshop close to Mandajors, with a tailor-made cuisine of bites, aperitif platters and brunches, again homemade from A to Z.
