Gault&Millau's review 2025

On the doorstep of the city center, facing the Saint-Jean-Baptiste cathedral, this restaurant is rightly the talk of the town. Boris Chapon, winner of the Dotation Gault&Millau, steers the ship with ease, offering a clear cuisine and adjusted prices, giving the choice in a menu-card (40 € the sequence) collected, but eloquent, of the precise and accomplished work of this pastry chef by training: haddock as a raviole with orange carrot purée, hake with smoked rice, beurre blanc and kalamansi, low-temperature pork tenderloin with red cabbage cream, braised endives with hearty jus, before an impeccable baba with pear compote and creamy arabica caramel ice cream. The fresh, respectful spirit of the house also extends to the cellar, with its regional and organic focus, and prices starting at €15 a bottle.
