Gault&Millau's review 2022

Chef Patricia Nazoa and her partner Fabrice Borrel spent some 15 years working in their own gastronomic establishment in Toulouse, before casting off for a more human-scale adventure. Thus was born Le Dit Vin, nestled not far from the calanques of Saint-Aygulf, and firmly moored to this beautiful region for several years now. Awarded the title of Master Restaurateur in 2018, the chef works with short supply chains, and grows her own aromatic and edible plants in the in-house kitchen garden. The menu is quickly perused, with less than 15 suggestions from starter to dessert, and a comprehensive "Tradition Menu" at €37. The South is in the spotlight, with foie gras chaud-froid with apples, presented as a flaky granny smith tart on which rests pan-fried foie gras and a melting pink mi-cuit, pearly royal sea bream fillets with crispy skin and melting oven-baked polenta, Iberian pork pluma and smoked paprika corn cream, a crispy bacon tuile and home fries. The journey continues in a sweet vein, with delightful proposals such as the regressive Valrhona 68% chocolate tartlet with hazelnut crème montée, or the rum-soaked baba-style orange cake. In the cellar, sixty or so references, well commented on by the owner, and a selection of wines by the glass. We have also learned that chef Jolhan Lafage will be joining us in the kitchen.
