A legendary hotel in an exceptional location on a small square, where you can admire the sea away from the crowds. Avoiding too much reliance on its prestige, the house makes the effort of a good Mediterranean table, not succumbing too much to the siren song and keeping its identity: fish soup, heirloom tomatoes and burrata, red mullet filet à la flamme, Provençal tomatoes, olive oil and sea fennel emulsion, lamb chops and gremolata, yogurt sauce with herbs and chickpeas, lemon basil cream, meringue and chestnut crumble.
