Chef's Restaurant Atmosphere, atmosphere! This characterful establishment successfully plays the hybrid card between restaurant and lounge bar, with seafood platters, plates of fine Spanish charcuterie and well-crafted dishes. Éric Lavallée is an experienced chef, and while the change of direction he made a few short years ago has freed him from the shackles of traditional gastronomy, he has not lost his sense of fine produce, precise cooking and appropriate combinations. Green asparagus marinated in a dashi broth and garnished with an egg brouillade is a perfect example. Beautiful pan-seared langoustines are enhanced by a squid ink and ginger-broccoli head jus, oyster mushrooms and new potatoes. The final touch takes the simple but delicious form of gavottes and creamy vanilla cream with a dash of salted butter caramel. The friendly, relaxed service is efficient, and the cellar offers interesting labels (often organic) from most of the major regions: Rhône from domaine Viret, Côtes-Catalanes from domaine Piquemal, Collioure from domaine Tambour, Reuilly from domaine Tatin, Sancerre and Pouilly-Fumé from domaine Bailly-Reverdy. Don't forget to take a look at the magnificent menu of whiskies, rums and other eaux-de-vie and liqueurs.
