Nuance is the unusual story of two brothers, Jules and Louis Rolland, who bought a former pizzeria after running a food truck. Their charming home boasts a pretty terrace and a pleasant garden, but above all a cuisine that's full of life, good taste and good humor, just like the one that reigns in the dining room. Pollock and sea rockrose, lobster cucumber and samphire, rack of veal, sardines and green beans... dishes that are daring but never gratuitous, always well-balanced, meticulous and based on precise cooking. The cellar favors pertinent choices over unnecessary opulence, with solid references from all regions.
