Taken over in September 2024 by the young Pascal Louw, this Pope's hideaway is getting a facelift, changing its name while retaining its main assets, notably the terrace and its absolutely exceptional view of the Episcopal city. The menu focuses on contemporary, well-presented market cuisine based on local produce. The menu is short and fresh: chioggia beet, rocket sauce and grilled buckwheat, poached foie gras, chicken broth, raisins and walnuts, braised Manex pork belly, parsnip and chard purée, saddle of lamb, carrots and leeks, a melting chocolate and cocoa shortbread.
