In the heart of the Belledone massif, Jérémie Izarn builds a remarkable bridge between nature and culture, proving the indefectible link between man and his environment. While admiring the beautiful Chartreuse, customers can discover these delicate dishes, whose sophistication takes nothing away from the raw expression of the terroir, the mountains, fields and rivers, something wild and tamed, condensed into a beautiful €137 menu. We start with a starter of pear and cabbage, grilled almonds, broccoli and dill, followed by a dome of foie gras lacquered with raspberry juice, leek sorbet and compote, toasted bread, two-cooked pink trout, avocado cream with lemon, fresh blackberries and grilled pistachios, choco-châtaigne sauce, melting veal, roasted squash with green cardamom, caramelized pumpkin seeds, fresh grapes, kalamansi lemon condiment, crab bisque and garlic confit, or the dessert enclosed in a puffed sugar bubble, cloud of salted butter caramel, blueberry compote, choco-hazelnut crumble and blueberry-tarragon sorbet.
