Chef's Restaurant A new addition to this beautiful, intimate hotel in the center of Bordeaux is the arrival of British chef Oli Williamson. After three years as chef de cuisine at Heston Blumenthal's Fat Duck and two years as pastry chef at London's Green House, he brings his personal interpretation of French gastronomic classics to La Table de Montaigne. We appreciated the precise cooking, the mastery of products and combinations, and the meticulous plates, although we did regret a slight lack of relevance in the dishes offered in the heart of winter (we're more in the mood for comfort food than raw sea bass or herb tarts...). Nevertheless, the toques are brilliantly assured, for example with the stuffed pigeon, spiced pumpkin, umeboshi, shiitake and a lovely cinnamon-scented sauce, also thanks to faultless service and a superb cellar of grands crus.
