Chef's Restaurant Resourceful and successful, Tanguy Laviale's restaurant (now shared with his second establishment, Vivants) renovates the landscape with talent. The style is at once convivial, highly professional and gourmet, in a contemporary setting of two rooms with distinct atmospheres, with the kitchen visible through the glass roof. Here, we love the fine work with quality products, especially seafood, to offer refined, precise and sharp plates (some, like the hake with smoked butter and shellfish, verge on three toques), and the subtle touches that give relief to dishes such as lacquering, fermentation or smoking (asparagus with bottarga and tarragon juice, scallops with garlic confit and yeast, marinated trout with watercress and pepper sauce...). Desserts are equally convincing (citron savory, chocolate ivy), and the cellar is well thought-out and attractively priced.
