Remarkable Restaurant No sooner have we left this singular, committed restaurant, where attention is paid to every detail, both in the dining room and in the kitchen, than we can't wait to return. Stéphan Paroche and Justine Viano, totally involved in the project, talented accomplices who won awards at this year's Gault&Millau Tour, take pleasure in creating for an ever-growing public, just as one would come to see a play sold out at the theater. The amuse-bouches, supported mainly by herbs from their garden, are a fresh, refined and subtly aromatic introduction. The work on sauces is impressive, like this syrupy cabbage reduction reminiscent of the finest Japanese dashis. The in-house maturations, including this tuna ventrèche accompanied by the first spring vegetables, are an ode to umami and Asian flavors. Last but not least, the melt-in-the-mouth guinea fowl with braised salad and creamy poulette sauce is a testament to meticulous technique. The service in the dining room is attentive, courteous and devilishly efficient, as is the work of the sommelier, who knows how to draw and advise from the vast regional and hexagonal cellar.
