Sponsored After working at such fine restaurants as Christopher Coutanceau's in La Rochelle, La Chèvre d'or in Èze and Le Puits Saint-Jacques in the Gers, Pierre Van Wynsberghe founded his own restaurant in 2023. Here, a young team, motivated by the desire to explore and surprise, celebrates the alliance between audacity and mastery of the classics, as the seasons dictate. Iberian pork presa with anchovies, smoked and grilled foie gras ballottine with asparagus and rhubarb tagliatelle. Or a surprising dessert of stewed olives, combava and olive oil madeleine, or a "pre-dessert" of fennel, creamy black sesame and lemon-basil sorbet. These are just a few of the ideas on the Chef's mind, as he frequently renews his proposals. "Trained in the classical school, we know how to find unexpected but harmonious combinations", he emphasizes. In a cosy, elegant setting, with carpeting and white tablecloths, the Gentilhommière invites you to enjoy these unique proposals, why not on the pretty terrace or in one of the two private dining rooms.
