Chef's Restaurant This legendary address, evoked by Balzac in particular, remains a must for Berrichons and those who know it, as much for its history as for the pleasures of timeless classic cuisine. Local families flock there for special occasions, to rediscover that busy, bourgeois charm, the comfort of things that never change. The cuisine is masterful, unchanging: a crown of smoked duck and baby greens, lobster with sweetbreads and tarragon emulsion, a chest of roast pigeon with pistachio sauce, apple ravioli with candied orange. Classic cellar.
