In the Vendée countryside, Audrey and Benjamin Pâtissier MOF 2015, have breathed a breath of modernity into this dwelling steeped in history; the bucolic decor of the dining room is the image of the cuisine, the fruit of teamwork, a notion emphasized by a chef rooted in his terroir, while adding a touch of creativity that makes this an exceptional table. Every detail is important, from the sourdough bread accompanied by four different salts and two butters, including one with shiitake; after a farandole of appetizers including a mini mogette tart, a mouthful of mussels with beet under a veil of milk, chickpeas from the bocage region in several textures, lean with elderberry vinegar, reveal the chef's constant inspiration; then the pollack is half uncovered, the other half a delicate mushroom purée, enhanced by a sauce to be eaten à la targette ; we're in the Vendée region, and Challans guinea fowl is accompanied by a stuffed zucchini flower on an onion emulsion in a perfectly coherent whole; the blackberry pre-dessert on a bell pepper sorbet gives way to a honey-roasted apricot, hay sorbet and curry arlette; the service, under Audrey's direction, is attentive, with a sommelier happy to help us discover exceptional living wines. An inspired chef who reinvents his terroir with intelligence, creativity and modernity for a table with three toques and one point more.
