While it’s true that competition is limited in the area around the prefecture, we must commend the efforts and success of Nathan Cretney and Solen Pineau, who have created a demand for fine dining in their neighborhood and fill this lovely contemporary dining room with its light, natural tones. From this prominent position, the chef can afford to assert his vision through hidden menus and the classic rhetoric (“the essence of our cuisine,” “the purity of the technique,” “the clarity of the ingredient”) to present dishes of the highest caliber featuring seasonal ingredients.
