Chef's Restaurant A few leagues from the "Italian town" of Clisson, Alexandre Papin has moved into a barn, renovated with great skill with the help of the Gault&Millau endowment, after several years of traveling the world. His cuisine is inspired by his experiences, but is based on local produce, most of it organic, and worked with remarkable precision and sharp tastes: red tuna, purslane and samphire are awakened by a bouillabaisse mousse, red mullet on the skin by a roasted garlic emulsion, and purple fig is served as a red wine sorbet with pistachio squares ; a fusion of flavors and varied experiences, a cuisine of finesse, even in the mignardise of saffron-spiked chocolate with melon and tagetes compote. The wine list shows that it is not the fruit of chance, but of real research with recognized winemakers; two toques straightaway for this high-potential chef.
