Chef's Restaurant It's a classic of Ambatian life. Jérôme Berthelot and his daughter Justine lead the proceedings with passion and commitment, and the dishes showcase the terroir. Everything is under control in this bourgeois setting, away from the historic center, and everyone at their post knows their business. An appetizer of marinated Loire mullet, smoked catfish, fermented milk, quinoa and sweet potato, followed by a filet of farmhouse pork from the Lochois region, kombu, burnt leeks, gnocchi, Sologne lentil dahl and an efficient dessert of meringue, lemon sorbet, combawa marshmallow, coconut mousse and cape gooseberry. Good bread, magnificent cheese platter and well-stocked cellar, with all the regional stars.
