A family business that’s bearing beautiful fruit at this noble and renowned restaurant in Amboise. Justine, who has joined her father Jérôme, works with him to craft a lovely seasonal menu—right down to the desserts, for which she is entirely responsible. The result is exquisite dishes rooted in a tradition that’s elegantly personalized with a touch of finesse: langoustine with tomato and zucchini in various preparations, pollock with langoustine-tomato sorbet, zander with turnip, spring onion, and kimchi; pan-seared veal sweetbreads with dahl and eggplant—all leading up to a passion fruit soufflé or a dessert featuring seasonal fruits. Isabelle manages the dining room with ease, while the Loire Valley wine cellar rightfully showcases local winemakers.
