Chef's Restaurant Mathias Dandine has just taken over this venerable inn in the heart of Calas. He's turned it into the kind of welcoming place he knows so well. The room, decorated with comfortable furniture, green banquettes, pink cushions and soft lighting, is enlivened by an open kitchen where his brigade, led by Guillaume Lemelle, his accomplice of many years, is hard at work. Outside, the atmosphere is that of a Sunday in the country, with canisses in the shade of century-old plane trees. The attentive staff bring you a condensed taste of Provence. Delicious homemade pissaladière on plates designed by Cécile Colombo; an admirable cold starter with fennel fondant, aniseed purée, pistachio pesto and grapefruit vinaigrette; grilled yellowtail pavé (a little overcooked), artichokes fried in preserved lemon, barigoule jus with oil matured by Jean-François Margier at the Moulin d'Auriol. Hats off to the soft poultry contisée with hazelnut, confit leg, tarragon zucchini on an exemplary light soubise sauce. We opt for a fruity white, a Côtes-de-Provence from Domaine Camaïssette, to accompany pastry chef Jean-Baptiste Gely's dessert, a combination of vanilla blackcurrant and lemon frosted with pastis and wild fennel. The chef is happy, and so are we.
