Remarkable Restaurant
Technique, mastery, flavor, it's all there and a little more - Provence, the lilting accent, the smile - in this unspoiled bastide in a Provencal village between Marignane and Aix. It's just as our Gault&Millau d'Or winner Mathias Dandine wanted it to be: the true champion of Provençal restaurants, the Gui Gedda of the 21st century (to whom he was so close), defending the cuisine, of course, but above all the authentic taste and charm of his region. In this beautiful and pure setting, everything is in tune, from the service to the dishes prepared with great assurance by chef Guillaume Lemelle, whom the boss does not hesitate to mention and highlight. Great art and great pleasure with the roasted scallops with walnuts, watercress and crosnes in walnut wine, the beautiful marriage of rabbit and lobster with vegetables and black truffles and a remarkably precise jus, before the delicious pithiviers of pheasant with foie gras, sprout salad and truffle jus. This cuisine, so chic and so evolved in its regional tradition, is one that still makes Provence sing and vibrate. Delicious desserts (crêpes Suzette, generous Grand Marnier savarin with clove ice cream), and a well-tuned wine cellar offering the secrets of a wide selection of local grape varieties.
