Always successful, always on the cutting edge, Pierre and Fred's partnership continues to make Canailles the best wine restaurant in town. The slate is mouth-watering, the huge wine list even more so, and the pairing comes naturally. You're sure to love the carpaccio of pig's trotters, the cabbage stuffed with beef cheek, the skate ballottine with cabbage, and the citrus fennel dessert. In the dining room, Fred puts on a good show, commenting on every dish and wine with astonishing agility and glibness.
