Chef's Restaurant What an atmosphere! You'll have to watch Fred, the white-bearded accomplice, as he details the presentation of each dish on the slate designed by chef Pierre Hochart. It's a great show, twice a night, for the twenty spectator-tasters, who lick their lips with artichoke tatin, pig's trotter carpaccio or bone marrow, vol-au-vent of sweetbreads and lamb kidneys, guinea fowl in two courses and Gers duck breast. Dishes of character and good humor that go perfectly with each other, right down to the desserts of the moment, the Paris-brest speciality, the chocolate dome or the bavarois, with the huge wine list handwritten on a blackboard, and all those owners we love so much, virtuous winemakers and promising youngsters, François Chidaine and Tessa Laroche, Elian Da Ros and Sandrine Farruggia, Valérie Ibanez and Paul Pillot... Bias, of course, right down to the reading choices of this committed bistro: it's Charlie Hebdo or Le Canard Enchaîné..
