By selling his Ferme, a little further down the Place de la Rotonde, Ronan Kernen is refocusing his business on his beautiful maison de maître on the Cours, a charming historic site where he offers his version of modern, shimmering gastronomic cuisine, sophisticated without being complex, accomplished in detail, even if the regional roots are rather weak: scallop tartare and artichoke sabayon yuzu chanterelle pickles, cod with seaweed butter mussels in escabeche peas basil red bell pepper confit yellow lemon aioli and puffed rice, pluma snacked pear in salsify bittersweet, poultry and langoustines shallot tatin truffled artichokes. The €60 menu gives access to the entire menu, with a few extras if required, and the lemon tart remains a tasty personal classic. Good lunch menu at €35.
