Chef Pierre Reboul has set up his new playground in the Renaissance hotel at the entrance to Aix-en-Provence. As soon as you enter, the open kitchen releases aromas that herald a memorable moment. The setting is elegant and soothing, chic and relaxed. The chef maintains his taste for highly inventive and technical cuisine, bringing originality and mischief to a surprise menu whose common thread is olive oil. The experience begins with a few signature nods - spherifications, flamby with foie gras - that set the tone: here, creativity is invited in without ever masking Mediterranean flavors. Among the signature dishes is a perfectly cooked zucchini flower, stuffed with delicate langoustine, spiced up with a hint of fresh wasabi and served with a zucchini velouté poured à la minute. A subtle balance of freshness, sweetness and spiciness that sums up the chef's approach. In the cellar, fine references like this Gigondas from Domaine Raspail complete the picture.
