Gault&Millau's review 2025

Set in a garden overgrown with roses, this former 18th-century dovecote was transformed into a hotel in the 1920s, when Aix established itself as a leading spa destination. Owned by the Swellen family for three generations, then by actor Christophe Lambert, the establishment now boasts 55 rooms, including 3 new suites designed by Thibault Picard, and 2 villas with refined Provencal charm, some with magnificent views of Mont Sainte-Victoire. At the heart of the park lies an outbuilding housing a suite ideal for families, and the Villa du Pigonnet, a confidential retreat for 8 people, flanked by a garden and private pool. An Aix institution since 1924, the Table du Pigonnet is run by chefs Thierry Balligand and Fabien Torrente, who serve southern-style cuisine on the terrace, which is extended by an avenue of century-old chestnut trees. As for the long swimming pool set among the trees, it's an invitation to delicious idleness... Member of Small Luxury Hotels of the World.
