Gault&Millau's review 2026

The duo (Manogeran Shasitharan at the piano, Jonathan Caron at the helm) who had been at the heart of Itinérance's first (and finest) hours parted ways at the end of summer 2025, only to reform in Paris, at the Mantra restaurant, where the polyglot cuisine of Marc Meneau's former pupil works wonders. On the shores of the English Channel, Jonathan Caron has chosen Victor Benoît, a young chef trained by Serge Vieira and Alexandre Couillon, to create a menu more in tune with the clientele who like to frequent this charming seaside resort. Local produce and fish are given pride of place, in a carefully-crafted menu that, for the time being, is cautious, as if to reassure: celery from head to branch, broth and seaweed, a superb dish of raw scallops in elderberry vinegar, scallop fritters and bard jus, a fine job on grilled line mackerel, chard and parsley jus before a comforting poularde with firm, juicy flesh, paired with salt-crusted beet. The two (fine) toques acquired by the previous team are retained, and they also reward the attractive wine list (one of Jonathan Caron's passions) and the smiling, attentive service.
