In this splendid 5* Relais & Châteaux-rated golf resort, just a few minutes from Geneva airport, luxury and tranquillity are the hallmarks of the establishment, right down to the two dining rooms. Jean-François Vasseur's Jiva is the first restaurant, offering fine gourmet cuisine inspired by the region. On the plate, Monsieur Petit's trout in gravelax, granny smith and celery pickles, chestnut mousseline, cancoillotte ravioli, pan-fried wild mushrooms and tonka bean emulsified broth, two-course guinea fowl from Dombes, roasted fillet, leg confit, sherry and cocoa jus, parsnips in three textures, Jiva saint-honoré, chiboust cream, vanilla chantilly and caramelized choux, Madagascar vanilla ice cream.
