For the valedictorian of the Institut Paul Bocuse, he needed a place to match his skills. And this splendid turn-of-the-century château north of Saint-Chamond fits the bill. The hotel-restaurant, renovated in a contemporary style that nonetheless respects the style of the period, is the current destination of Pierre Carducci, who has also worked at Collonges-au-Mont-d'Or and Têtedoie. His cuisine is professional, uncluttered and well-presented, with great respect for the products used. The "Menu de l'instant" is a good first step, with Chinese cabbage, parmesan, tomato confit and anchovy; line hake, verbena, corn and potato; beef, red cabbage and chanterelle mushrooms; dark chocolate, fig and agastache. If you'd like to go even further, you can discover the 9-sequence tasting menu at €87, which can be complemented by a wine pairing or a tea pairing.
