Remarkable Restaurant Pierre Reboul has moved around quite a bit in recent years, since leaving Rive Gauche in Tain-l'Hermitage. We met him at Vallon de Valrugues, then in his own restaurant in Aix-en-Provence (where Mickaël Féval is now based), but with Château de la Pioline, he seems to have found the ideal place to blossom, giving free rein to his imagination and natural audacity. His interpretation of bouillabaisse is fascinating, as is his work on steamed Huelva carabineros, lemon caviar, zucchini flower and fine langoustine stuffing. His menus remain hidden and therefore (more or less) imposed, so we're not obliged to adhere to the concept, but the pleasure is invariably there. The service is perfect, easy-going and good-humored, and the cellar is well-stocked.
