Chef's Restaurant La Table" recently moved into the splendid Villa Gallici, an 18th-century haven of peace just a few minutes from the center of Aix. Here, tranquility and good food go hand in hand. Chef Christophe Gavot's cuisine exudes the Mediterranean, subtly blending Italy and France. His creations include mi-cuit of foie gras, mustard and melon coulis, and zucchini flower stuffed with Brousse du Rove, Mediterranean mussels and lemon blanquette with Limoncello. Semi-cooked tuna in citrus gremolata, lemon gravlax and zucchini purée is a fine example of how to honor the sea. On the land side, roast saddle of Sisteron lamb with spinach stuffing and caper broth impresses. The tangy raspberry heart and the tribute to apricot make fine conclusions. In the cellar, head sommelier Kévin Lequin oversees a collection of 500 wines. Service is as discreet as it is precise.
