Chef's Restaurant It's the model bistro, gourmet, mischievous, supportive, affectionate, the one we all love. Pierre at the piano, Fred on the accordion, good humor in the dining room, top-quality wine and bread, a slate that makes everyone who passes by salivate. If you've found a place to sit, you'll fall for it all, and it'll be heartbreaking to give it up... pig's trotter carpaccio, mushrooms stuffed with stracciatella, the virtuous marriage of squid and blood sausage, bonito fillet and umami broth, mallard in three ways, hare à la royale... You have to come three days in a row, for lunch and dinner, to get through the menu, and it's all good. Fortunately, the cellar is full of connoisseurs' skittles, good wines from all over the South, and friendly winemakers from all over.
