Chef's Restaurant Thomas Roret and Julien Chevallier have taken up the torch left by Yvonne Le Formal after the death of her husband. The passion and ethos of this traditional house - good produce and personality on the plate - have been maintained, and the chef, who has a fine training background (Savoy, Jung, Thorel, Banzo and, of course, Jean-Luc Le Formal), knows how to lead the menu in the way that regular customers appreciate, with scallop strips and fennel royale, hare in effilochée à a royale or Le Formal-style beef fillet, porcini foie gras and calf's head... A fine sequence at €59, with a pleasant chocolate caramel cardamom dessert, from a well-stocked regional cellar.
