A coherent experience that asserts a culinary identity in this off-center yet conveniently accessible location between the heart of town and the Chartrons. Fabien Beaufour's cuisine is based on obvious savoir-faire, punctuated by Asian accents and faithful to the rhythm of the seasons. Eggs and hens reveal a remarkable complexity: royal broth, grilled fin and Madeira jus harmonize with Asian touches (shiitake, bonito) that subtly destabilize classic references. The saddle of rabbit, roasted over a wood fire, is precisely cooked. The preserved lemon jus sublimates the meat, while the zucchini adds the necessary freshness. The honey-hay dessert demonstrates a masterful balance, without artifice. The service coordinated by a young but professional brigade masters the details: precise presentation of dishes, adaptability to specific requests, appropriate discretion. The wine list, selected by sommelier Tanguy Richardson, gives pride of place to French vineyards with a few relevant foreign references, within a good price range.
