Fabien Beaufour is now one of the best-known names on the scene, and his restaurant welcomes both first-day friends and rich business meals. The atmosphere is relaxed, but on the plate, it's all about seriousness, taste and the expertise of a three-toque champion, in a chic, comfortable bistro setting. At lunchtime, the €54 menu is always full of welcome ideas, from the "forgotten" pea and pomelo shrimp refreshed with mint, to the rabbit leg in albufera with mushroom and camus artichoke jus, to the baked apple soufflé with pineau des Charentes and cooking caramel. For regulars who prefer not to have to choose, there are three tasting menus at €76, €105 and €130. Fine cellars of blue chips and châteaux, wide choice of wines by the glass.
