Prestige Restaurant The Gault&Millau Academy will no doubt one day think of Philippe Etchebest, who does so much for his profession and for the renown of French cuisine. With his Maison Nouvelle, he adds an intimacy that is unheard of, even at his table d'hôte in the Grand Théâtre. After ringing the doorbell, you discover the interior, with its photos and personal knick-knacks, its hushed, contemporary elegance, its carefully chosen lighting and its magnificent tableware. This concern for hospitality is linked to what he reveals about himself, a culinary path that follows his life's journey from the first appetizers to his father's snow eggs. The unique menu (we're not fans of the formula, but here we're talking about Philippe Etchebest and €220, the price charged by complete strangers of dubious reliability) takes us on a journey through the plates, all personality, haute couture precision and assertive style, such as the unmissable raviole gourmande with foie gras, the truffled broth with celery cabbage and poultry consommé (the "ephemeral truffle" is particularly successful), the turban with scallops, sea urchin and lemon caviar, with a very powerful beard and sea urchin sauce, the canaille with veal tongue, anchovy condiment and charcuterie sauce... The desserts are also full of surprises: the grapefruit and avocado combination is both surprising and delightful, the coffee experience is a real treat, and the cellar is powerful, for connoisseurs or simple amateurs who benefit from the excellent advice of the sommelier.
