Remarkable Restaurant What Marion and Baptiste Denieul have achieved in Guer in the space of just a few years is similar, albeit proportionately, but with the same objective and at a time when it's much harder to take risks, to what the Bras, Marcon or Goujon have done. In other words, in a small village in central Brittany, to establish a fine dining establishment linked to a quality hotel, in the place where the family crêperie used to be located. The fact that this is between Rennes and Ploërmel and not on the Riviera, and that the chef provides nine services a week for a local clientele that is fortunately becoming increasingly attracted to this fine, delicate cuisine between land and sea, is all the more reason to take our hats off. We also applaud the consistently restrained prices, which take you on a wonderful journey for under €100 (in 5, 6 or 7 courses from €85 to €120): the unlikely marriage of Petrossian caviar and beet as a starter, the royal of mushrooms and foie gras on a mushroom consommé, the coastal fish with leeks and turmeric-scented beurre blanc and the simmered lobster with pumpkin papillote and rhubarb jus. We conclude with two fine desserts (vanilla caramel beurre salé, poached pear with honey and chocolate ice-cream) and are delighted by so much attention to detail, in the welcome and service, and in the accompanying advice, with a cellar that is being expanded every year to include a number of small, accessible vintages.
