Chef's Restaurant The highest perched (in altitude) among the Gault&Millau Dotés are also among the most discreet and humble members of this large brotherhood of over a hundred chefs. Pauline and Christophe Billau are visibly happy, lost up there in the mountains with their daughters, in the heart of Nice's hinterland, on the Col de la Couillole. It's the ideal location for this chef, who scours the surrounding mountain pastures for flowers and herbs, and relies mainly on local producers to shop and compose his menu. The restaurant is only open for dinner (a tip: book one of the seven pretty rooms to make the most of the moment) and offers just one menu, at €77.
