Remarkable Restaurant Do you have to be a bit high (or frosty, depending on the season) yourself to climb the 1,700 metres or so of ascent to the finish? No matter how hard you try, the finish makes you forget everything. Nature is everywhere, unspoilt and authentic, and the Auberge stands alone in the middle of the landscape. Our two proprietors, Pauline and Christophe Billau, have created a place where you can let go, with 7 rooms and a gourmet table that reveals the best that the surrounding villages, hills and rivers have to offer, in a unique 5-course menu priced at €87. Smoked trout from the Cians, poultry from Pierlas, foie gras from the Southwest as a dessert with roasted lemon pastry and walnut cookie; white asparagus from the Camargue in two ways, creamy with homemade poutargue and roasted in hazelnut butter with candied egg yolk and invigorating wild oxalis coulis; sisteron lamb in majesty, the saddle cooked in the Binchōtan (a Japanese barbecue), the shoulder in pastilla and the feet in the heart of an artichoke in barigoule on a reduced juice perfumed with quintessence and caraway. The cheeses are all matured here, from Sauze, Isola 2000 and Guillaume, and whether from goat, sheep or cow, the good milk expresses the full range of flavors. Quince jelly and larch honeydew, which can be spotted as soon as you enter the restaurant, sweeten both the youngest and oldest pasta dishes. Chocolate brings the adventure to a close: nestled in the heart of a chocolate gavotte, the pure Colombia ganache is enhanced by sweet oranges from the coast and a little pollen from Daluis. The service is second to none, and the cellar offers Hautes-Alpes and local wines in particular. This is where the world stops, where the pleasures of all the senses begin. A third toque for this cuisine of the peaks.
