Gault&Millau's review 2025

Nestled in the small village of Valdeblore, in the heart of the Mercantour Park, this stone building has been brought back to life by the trio of Mickaëlle Chabat, Louis-Philippe Riel (former chef at 6 Paul Bert, Paris) and Alexis Bijaoui (Barber, New York). The place now revolves around a large dining room warmed by a huge freestone fireplace, where you can enjoy 100% local cuisine that changes with the seasons, largely based on produce from the permaculture vegetable garden. The 2 bedrooms and 3 suites invite you to extend this delightful stopover, furnished with beautiful antiques (Thonet chairs...) and extended by superb terraces overlooking the valley. A rustic chic place that reinvents the charm of guest houses with spirit.
