Chef's Restaurant Twenty kilometers from Nice, the road rises gently into the hinterland. It leads to Contes (Clos de Contes, to be precise), a village that may not have the same polish as Saint-Paul-de-Vence or Èze, but whose authenticity has been preserved. Here, in the central square, at the foot of the 19th-century church and in the shade of the plane trees, chef Raingeard has set down his pots and pans. For more than ten years, he has been making the horns of Cap Estel shine, and at a time when any rest would be well deserved, he has decided to take up his apron and play a father and son score in which all his accumulated experience takes on its most accomplished form. The cuisine is bistronomic, sincere and built around the market and local produce. Marinades, infusions, reductions: behind an apparent simplicity, each plate hides a true chef's work. Grilled prawns on a bisque of carcasses softened with roasted almond milk; rosy lamb like a Sunday leg of lamb; poultry brandade on a parmentier of confit thighs; cassolette of Paimpol coco beans with citrus bouillon and juice; fig subtly roasted on a siphon of warm mascarpone cream, hiding a heart of cracker praline, escorted by a fig sorbet.. The cellar, with its 80 references, offers a fine balance between classic appellations and accessible nuggets. Meanwhile, in the dining room, Édouard Raingeard enjoys working with his father, sometimes taking a back seat to the stature and outspokenness of the chef, who doesn't hesitate to come and present his dishes himself. And perhaps that's the key: everything converges on the cuisine, on the gourmet sincerity that endears the place. A three-course menu at €50, signed by a great chef who rediscovers the simple pleasure of cooking for himself and for others. A real bargain, in a bucolic setting that makes you want to come back again and again.
