Gault&Millau's review 2026

This solid house on the Route des Vins d'Alsace, once a sanctuary of fine Sunday cuisine for Mulhousiens, has been owned by the Koehler family since 1785. The decor is a muted classicism, bright and modern, in pastel hues, from the carpets to the pretty white-topped tables adorned with sculptures. During our last meal, the kitchen, once full of energy, seemed to have lost some of its form. To open the 5-step €72 menu, the vinaigrette accompanying the leeks seemed reduced to chopped "mimosa" egg. The Florival snails, topped with an airy, gourmet sabayon, were a little overwhelmed by the excess salt in the anchovy fillets. But the fresh, shiny skrei back, accompanied by celery in two textures and a sauce vierge, is sublimated by very precise cooking. The venison noisettes have been replaced at the last minute by a 30-day-aged beef tenderloin, which seduces with a tasty meat jus with fermented mushrooms. As for the pavlova served as a dessert, it seems perfunctory, a medium meringue topped with a slightly brittle mango sorbet. The wine list features fine estates such as Deiss, Trimbach or Tollot-Beaut, and even a few rarities served by the glass thanks to the Coravin system: Silex de Dagueneau or Pommard de Parigot.
