Remarkable Restaurant A sumptuous Place des Vosges townhouse, close to L'Ambroisie, for an equally princely offering by Mathieu Pacaud, son of Bernard. And in a smooth, noble style, a menu of fine, prestigious products in these classically inspired dishes: bottarga caviar with smoked eel and chard risotto, lobster with binchotan and pea croustade with Chausey sauce, king pigeon with port sauce infused with bonito. For dessert, you can opt for Laurent Dubois cheeses, or chocolate soufflé with vanilla ice cream.
