The tenor of the eastern suburbs, Jacky Ribault, has not forgotten this address where he made his name, today with his chef Lorenzo de Girolamo. Italian-accented movement between kitchen and dining room, not always easy to decipher. No need to know what you're eating after all, there are some great ideas on the plates: the magnificent Dieppe scallops, perfectly cooked, are set in an emulsion of Jerusalem artichokes and garlic, like a trompe-l'œil. Auvergne veal, with black garlic and reduced jus, is accompanied by fine salsify, butternut purée and a few roasted hazelnuts and walnuts. As for the desserts, the "blue clementine" table offers a clever and harmonious play on textures. Very light and fresh. The wine list opens with a fine selection of champagnes, offering a definite choice from €100, and glasses from €21 to €30.
