Remarkable Restaurant After the fine years of Jean-Alexandre Ouaratta (who was awarded three toques here), the amirale table at this legendary château-hotel nestled in the heart of the land of golden stones had been in a state of vegetation for several seasons. So, in 2022, the Lavorel Group (owner of the property, as well as Le Chabichou in Courchevel) dipped into its own stable to place Stéphane Buron and his son, Antonin, at the helm of Le 1217 (winter in the snow, summer in Bagnols). Our four-toque chef from Courchevel has gradually taken a back seat (while, of course, looking after his son), and it's Antonin who, with his team, is now designing a very pretty stroll around the château gardens, in a classic spirit modernized just enough to be worth three toques: cauliflower and caviar tourteau, beautiful slow-cooked Murgat omble-chevalier with snail quenelle and nasturtium cloud, grilled sea bass filet with Café de Paris-style hollandaise sauce, stuffed zucchini and chanterelle mushrooms before a very academic Bresse pigeon in two ways with grilled celtuce and abattis toast. Desserts (by Nicolas Petozzi) in the same spirit, from reassuring (chocolate, sesame, sesame ice cream and creamy manjari) to more innovative (beautiful emotions on the combination of fig and sorrel sorbet). High-performance service (under the direction of Florian Gauriat), both professional and smiling, a plethoric wine cellar (recommended by Luca Calla) with a thorough knowledge of the region, and a delightful, never stodgy atmosphere in this magnificent, but never overpowering, historic setting.
