Remarkable Restaurant Of course, we're delighted to see the city's emblematic restaurant moving upmarket, but we're also a little nostalgic, of course, for the fan-covered bar room where you could enjoy a pan-fried tellin. Things change, as do the codes accepted by some, and simplicity has disappeared. But that doesn't mean you can't enjoy Denis Martin's fine dishes, such as roasted octopus with papada de bellota and a crispy tartelette with roast juice, medallion of sea bass steamed with citrus fruits, leek and nori, shellfish in marinière and iodized butter, or roast lamb with wild garlic and guanciale, fromage blanc and artichoke with strong juice. The tastes are crisp and sharp, the execution sharp for three fine toques. Attractive four-course menu for €78, ending with a chocolate dessert, extensive wine cellar throughout the region and some fine national labels. The house has announced major renovations for late spring.
