Remarkable Restaurant Today, Sétoise's fine dining scene has no real competition, and Denis Martin manages local gastronomy with the right accent, top-quality products, and an intense, respectful and refined approach to enhancing their value: raw red tuna confit with citrus fruits vitello tonnato style, cuttlefish in rouille reduction and potato spaghetti, roast veal with black truffle poached marrow truffle jus and a beautiful citrus dessert in a seven-course sequence with total mastery for €115. An interesting cellar for discovering the region's vineyards, with excellent service that respects the codes of this singular establishment, both in its stylish setting and its ambiance.
