Gault&Millau's review 2025

In the heart of the village, a picture-postcard Basque house (a former coaching inn on the road to Santiago de Compostela), owned by the Isabal family for several generations and a favorite meeting place for a growing community of faithful followers, eager for nature and authenticity. Far from the hustle and bustle of the coast, visitors come here to sample the cuisine of Xavier Isabal, who brilliantly reinvents the Basque-Béarn region. Afterwards, you'll succumb to the charm of this home, a member of the Collectionneurs, where guests are welcomed as friends in the 26 rooms and suites, with their pure lines, antique furniture and luminous tones. The delightful garden with its vegetable patch boasts a swimming pool with adjoining fitness room and a sauna for a wellness break. It's the perfect place to savour unspoilt Basque culture, and to discover the nuggets of the surrounding countryside: the village of Ainhoa with its superb 17th-century houses, the nearby forest and its hiking trails, home to the Pottoks, the wild Basque horses.
