It's fresh, it's cooked, it's good! With the added bonus of the lively atmosphere of the Halles, the slightly hefty bill makes it easier to pick from the short slate and be served by a cool, young team. The pesto verde razor clams au gratin are a hair below expectations and not very sandy, but the hake steak is correct, with the purée and sucrine, and the chocolate moelleux is just remarkable, the best of the meal, which secures the toque.
