Located across from the abbey, this is a prime location for this young, dynamic restaurant, which brings 21st-century cuisine to a sacred setting. The atmosphere is nonetheless contemporary, and the young, energetic team has been working under a new chef since last fall: Julien Durand. The approach remains the same: locally sourced ingredients and a commitment to natural, seasonal flavors—though, unfortunately, the evening menus are served à la carte. There’s a great lunch special for €29 that changes regularly; recent offerings have included egg with paprika mayonnaise, chicken breast with charcuterie-style jus and polenta, and rhubarb clafoutis.
