Gourmet Restaurant The first grew up in Saint-Wandrille, the second in Yvetot, and they met in Australia... What could be more natural for two Normans, travelers and conquerors, than to give a Viking name to their first restaurant. A superb contemporary building facing the abbey (you must have heard the monks intone a Gregorian chant at least once in your life in this sumptuous setting). Timothée Ludot, a native of the region and a graduate of Néoma, is in charge of the dining room, while Alexandre L'Horphelin is in charge of the kitchen, for a still modest score, but one with real assets: local products and suppliers, modernity of the approach and of the plate, regional identity preserving itself (somewhat a lot) from fashions. The chef, who worked at Guy Savoy's Chiberta before sailing the world's oceans, offers simple dishes that look good: good slices of confit pork belly with a slightly overpowering apple vinaigrette, trout from a nearby fish farm married to carrot in a declension, an honest cook's dessert of rhubarb with olive oil and buckwheat crumble. The house is beautiful and will grow, the energy is good, the cellar under construction, with cider and local beer.
