Facing the most beautiful ruins in France, according to Hugo, this long-established inn, with its rustic elements preserved in a contemporary setting, stays the course thanks to its valiant chef Christophe Maudit, who navigates between tradition and modern regionalism, with sought-after herbs and aromatic plants: lemon mackerel and helichrysum, scallops and garden verbena, Normandy beef jus infused with hay, before desserts that are always well imagined (apple rosemary trumpet). The atmosphere is pleasant, a little tense at times, but the weekend families are there to keep the party relaxed. Four-course menu for €48.
